Roasted pepper couscous

Serves 2 – Approx 90 calories per serving.

100g couscous

1 red, green, yellow pepper

1 tbsp tomato paste

100ml Vegetable stock

1 tbsp paprika

 

1. Cut the peppers into quarters lengthways, place in a baking tin and drizzle a little olive oil then sprinkle the paprika over top.

2. Preheat the oven to 220 deg and roast peppers for 30 mins.

3. Meanwhile bring to boil the vegetable stock and add the couscous, reduce to a simmer and cook for 5 mins. Then remove from heat, cover and let sit for 10 mins.

4. Remove peppers from oven and let cool. Once cool chopped up finely.

5. Using a fork break up the couscous and add in the peppers. Add the tomato paste and stir through. Then serve.


Spiced Chicken Couscous

I’m always looking for a healthy option without compromise on taste, this is so tasty and at only 260 calories per serving with 4g fat…..you wanna try this!  Leaves a bit of room for my glass of prosecco…lol!

Serves 2

2 tbsp Olive Oil or Rapeseed Oil

2 Chicken Breasts

1 tsp Coriander

1 tsp Cumin

1 tsp Paprika

1 tsp Garlic Powder or 1 garlic clove

1 onion chopped

80g couscous

150ml Hot Chicken Stock

120g Chick Peas

80g frozen Peas

 

1. Heat oil in a large saucepan, add chicken, coriander, paprika, cumin and onion and fry for 10 mins to lightly brown.

2. Add garlic, chickpeas, couscous, chicken stock and season with salt and freshly ground black pepper. Cover and cook on simmer (Low Heat)  for 20 mins until the chicken is tender and the liquid absorbed.

3. Add peas then cook for 5 mins more.
